Pasta e Fagioli

Pasta and beans, adopted from Cooks Country Pasta e Fagioli

Equipment

Beyond standard kitchen equipment, the following items are also required or helpful:

  • Food processor or equivalent

Ditalini pasta (or other small pasta such as macaroni)

Basil, chopped (at end of preparation)

Parmesan cheese, grated

Serving Size

Serves about 6 people.

Preparation

  1. Prepare ingredients.

    1. Cut onions, carrots, celery and ham steak

    2. Strain both cans of beans

  2. In a sauce pan combine heated oil, ham, celery, onion, carrots, and salt.

  3. Cook for about 10 minutes till vegetables soften.

    1. No browning on vegetables.

  4. Puree one can of cannellini beans with water.

    1. Food processor (or emersion blender) for about 15 seconds.

  5. Add tomato paste, garlic cloves, and red pepper flake to vegetables.

  6. Cook for about bout two minutes to combine flavors.

  7. Add chicken broth, second can of cannellini beans, and pureed beans to pot.

  8. Bring broth to boil, then reduce to simmer.

  9. Cook for about 10 minutes, then bring back up to boil.

  10. Add pasta and cook for about 12 minutes.

  11. Stir occasionally to break up pasta.

  12. Chop basil and add to soup.

  13. Add parmesan cheese.

Serving

Add more parmesan cheese and drizzle of olive oil.
