Serving Size
Serves about 6 people.
Preparation
Prepare ingredients.
Cut onions, carrots, celery and ham steak
Strain both cans of beans
In a sauce pan combine heated oil, ham, celery, onion, carrots, and salt.
Cook for about 10 minutes till vegetables soften.
No browning on vegetables.
Puree one can of cannellini beans with water.
Food processor (or emersion blender) for about 15 seconds.
Add tomato paste, garlic cloves, and red pepper flake to vegetables.
Cook for about bout two minutes to combine flavors.
Add chicken broth, second can of cannellini beans, and pureed beans to pot.
Bring broth to boil, then reduce to simmer.
Cook for about 10 minutes, then bring back up to boil.
Add pasta and cook for about 12 minutes.
Stir occasionally to break up pasta.
Chop basil and add to soup.
Add parmesan cheese.
Serving
Add more parmesan cheese and drizzle of olive oil.
