Roasted Sweet Potatoes and Brussel Sprouts

Serving Size

Serves about 2 people.

Preparation

  1. Preheat oven to 400°F.

  2. Trim and halve the sprouts.

  3. Peel and cut sweet potato into 0.5 inch cubes.

  4. Grate (or mince) garlic cloves.

  5. Mix oil, sprouts, sweet potatoes, and garlic in bowl.

  6. Toss salt, garlic powder, and cumin.

  7. Line jelly roll pan with aluminum foil.

  8. Lay out ingredients on pan in single layer.

Cooking

  1. Roast ingredients for about 40 minutes.
